Waking up to a plate of Divorciados Eggs is like treating myself to a mini feast that effortlessly balances comforting flavors with a hint of rebellion—each bite layered with crispy tortillas, creamy refried beans, perfectly cooked eggs, zesty salsas, and a sprinkle of cheese heaven.
Huevos Divorciados is a breakfast I love, and it’s one of my favorite Mexican dishes. The dish has a number of components, which is one of the reasons I enjoy it so much.
Hard-cooked eggs team up with corn tortillas served up in a tasty breakfast combination. Add another layer of flavor and you use something that I love—Salsa Verde!
Huevos Divorciados is all about the flavor, and if you can’t tell already, I think it’s pretty darn tasty!

- 1 cup green salsa
- 1/2 cup refried beans

How to Make this Huevos Divorciados Recipe
1. In a large skillet over medium heat, warm the oil. Using a pair of tongs, add the tortillas, one at a time, to the pan. Lightly toast both sides of each tortilla until crisp but not too hard. Remove the tortillas from the skillet and set aside.
2. In the same skillet, lower the heat and warm the refried beans until they are thoroughly heated. Spread a quarter of the beans on each tortilla.
3. In an additional skillet, heat a small quantity of oil over medium heat. Break the eggs into the skillet and sprinkle with salt and pepper. Cook to your liking, either yolk side up or with the yolk side down, for the “over easy” egg.
If you like your egg sunny side up (which is just a yolk side up egg that you cook without flipping), cook the egg for 3 to 5 minutes, or until the white side of the egg is completely set.
4. Put one cooked egg on every tortilla that is covered with beans.
5. Spread two of the eggs with red salsa and the other two eggs with green salsa.
6. Crumble queso fresco or feta cheese over each egg.
7. Top with finely chopped fresh cilantro.
8. Consider adding sliced avocado on top.
9. Serve the divorciados eggs at once so that the different flavors are still fresh and contrasting.
10. Revel in the rich and delightful breakfast that you have prepared!

Huevos Divorciados Recipe Substitutions and Variations
Possible substitutions for ingredients include:
Substitute flour tortillas for corn tortillas for a softer texture.
For a lighter version, use 4 large egg whites in place of the whole eggs.
Replace red salsa with roasted tomato salsa for a smoky flavor.
For a tangier taste, substitute tomatillo salsa for green salsa.
Substitute black beans for refried beans for a texture and flavor that is a tad different.
Pro Tips
1. Warm Tortillas While Preparing Other Ingredients Keep the tortillas warm in a low oven (around 200°F or 93°C) after toasting. This prevents them from cooling down too much while you prepare the eggs and refried beans.
2. Prevent Soggy Tortillas To maintain the crispness of the tortillas, you can lightly brush them with oil before toasting. When adding the salsa, be gentle and avoid over-soaking, as too much moisture can make the tortillas soggy.
3. Optimize Egg Cooking For perfectly cooked eggs, use a lid when you’re cooking them sunny side up. This helps trap steam and cook the tops of the eggs without flipping, ensuring the whites are set while keeping the yolks runny.
4. Enhance Salsa If time allows, consider making your own fresh salsa for a more vibrant flavor. You can adjust the spice levels to your liking by adding more jalapeños or using different types of peppers.
5. Personalize with Toppings Beyond avocado, consider additional garnishes like a sprinkle of lime juice, pickled jalapeños, or a dash of hot sauce to customize the dish to your taste preferences.
